RIPH Level 2 Food Safety

 

The Level 2 Food Safety certificate is aimed at all food handlers in the catering and hospitality sectors. Typically those requiring the certificate would include:

  • Residential Homes -  Retail Outlets
  • Care Homes -  Hotels
  • Hospitals -  Pubs
  • Restaurants -  Hospitality Catering
  • Schools -  Play Groups providing catering
  • Prisons  -  Fast Food / Snack Bars

  • Introduction to Food Safety -  Personal Hygiene
  • Microbiological Hazards -  Food Premises & Equipment
  • Food Poisoning & Controls  -  Food Pests & Controls
  • Contaminations & Hazards  -  Cleaning & Disinfection
  • HACCP  -  Food Safety Law & Enforcement

Course Outcomes

  • To provide an understanding of the principles of food safety, and how to apply this knowledge to control hazards and prevent food poisoning. It is recommended that this certificate is refreshed every 3 years

 

Course Details

  • The course is of 6 / 8 hours duration which is followed by a thirty question multi choice examination paper.
  • The examination duration is 45 minutes
  • Candidates must achieve 20 correct answers to be awarded the certificate.
    • A pass will be awarded for 20 to 25 correct answers
    • A credit will be awarded for 26 to 30 correct answers
  • Special circumstances
    • Candidates who may encounter difficulties in meeting the normal examination criteria may apply for special arrangements e.g. oral examination. This must be mentioned at the time of application for the course.
  • It is strongly recommended that applicants refresh this certificate every 3 years

  • The individual course fee for RIPH Level 2 Food Safety Certificate is £44 (this cost includes the £11 examination fee which is payable to Royal Institute of Public Health). Group rates for 10 or more are available

  • Courses are held in all areas either “in house” at client's premises or at a local “off site” venue dependent on numbers.
  • Progression would normally be to the RIPH Level 3 Food Safety Certificate which is aimed at Supervisory / Management staff with a responsibility for food handlers

 



RIPH Level 3 Food Safety

 

The Level 3 Food Safety Award is targeted at Management and Supervisory staff in the food catering, retail and manufacturing sectors. Typically those managers or supervisors would operate in the following areas:

  • Residential Homes -  Retail Outlets
  • Care Homes -  Hotels
  • Hospitals - Pubs
  • Restaurants -  Hospitality Catering
  • Schools -  Prisons

  • Cleaning
  • Applying & Monitoring good food safety measures
  • Contributing to the food safety training of others
  • Temperature Control (Cooking & Chilling)

Course Aims

  • The aim of the RIPH Level 3 Award in Supervising Food Safety in Catering is to provide a knowledge and understanding of food safety principles and practices relevant to supervisors working the in the catering and hospitality sectors.

 

Course Outcomes

  • The candidate will know and understand their expected behaviours with regard to compliance with relevant food safety legislation
  • The candidate will know and understand how to apply and monitor good hygiene practices
  • The candidate will know and understand their rule in the implementation of food safety management procedures
  • The candidate will know and understand the importance of, and contribute to, staff training

 

Course Details

  • The course is of 3 days duration, 3 x 8 hours
  • The examination duration is 2 hours and consists of a multi-choice forty question examination
  • Candidates must achieve 26 correct answers (65%) to be awarded the certificate.
    • A pass will be awarded for 26 to 34 correct answers
    • A credit will be awarded for 35 to 40 correct answers
  • Special circumstances
    • Candidates who may encounter difficulties in meeting the normal examination criteria may apply for special arrangements e.g. oral examination. This must be mentioned at the time of application for the course.
  • It is strongly recommended that applicants refresh this certificate every 3 years
